Mary’s founders Jake Smyth and Kenny Graham have opened Mary’s Hot Pizza at Sydney’s Entertainment Quarter, a dedicated pizza venue sitting right next door to their existing Mary’s location.
This marks a considered return to pizza for the duo, bringing together reworked cult favorites from earlier Mary’s pizza projects alongside new originals.
The menu features Detroit-style square and NYC round pizzas, available by the slice or whole. The real magic happens in the dough, which is slow fermented for 36 to 48 hours, creating pizza that’s lighter, crispier and easier to digest. Slices start from $6 to $7.50, while whole pies go up to 18 inches for $39.
Head of Culinary Jesse Warkentin leads the kitchen, bringing experience from Odd Culture, Continental Deli, and Vin-Cenzo’s. The drinks list covers natural wines, beers and cocktails, including house-made limoncello and an olive-oil fat-washed martini.
