ELE By Federico & Karl Introduces A New Snack Menu

The award-winning and newly hatted restaurant has launched a snack menu with 13 delectable dishes.

ELE, the brainchild of Federico Zanellato and Karl Firla, opened within The Star Sydney last year and we haven’t been able to spot thinking about it. As they’ve made their wave across Sydney’s hospitality scene with a newly appointed Hat title, the team has introduced a delicious snack menu comprising 13 new dishes.

Drawing on the elements of fire, water, earth, and air, ELE maps a menu of sensory experiences, and their new snack menu is no different. Guests are invited to take a seat in the Dining Room or intimate Chef’s Table, where they can catch a glimpse of the open kitchen and watch award-winning chefs prepare each dish. Enjoy an alternative selection of light bites with a signature fine dining twist, using local and sustainably sourced seasonal ingredients.

On the menu are dishes suited for sharing, ranging from lighter starters to substantial meatier plates. Start your snacking experience with Homemade Sourdough & Butter, delicious on its own or alongside Wagyu Tartare, with Cucumber & Black Garlic. For seafood lovers, opt between Coral Trout Collar with green tomato sambal, Skull Island Prawns with a zesty desert lime kosho, or Smoked Cod Donuts (a nod to ELE’s signature innovative cooking style). Meatier options for snacks include a truffle summer salad with Glazed Quail and Stone Axe Tri-Tip with garlic condiments. There are also options catered for vegetarians, with Charred Cabbage and Brown Buttered Baby Carrots highlighted on the menu. Want more luxury to your meal? You can also add caviar on any chef’s recommended dish.

Of course no snack menu is complete without drinks. The new dishes will be served alongside ELE’s extensive drinks list featuring wine, aperitifs, cider, beer and elemental cocktails. Make sure to try the 2 newest creations, ‘Hungry Thirsty’ (Four Pillars gin, Campari, sweet vermouth, and OAK strawberry milk) and ‘Ocean Martini’ (Manly Spirits gin, Italiscus and Tasmanian pepper leaf oil).
