Don Casamigos: The Boujee New Darlinghurst Joint Serving Tequila Shots Alongside Bumps Of Beluga Caviar

Forget the salt and lime, Don Casamigos has taken our Mexican favourites and luxed them up to the max at this sultry new Mexican hangout.

It’s clear by now that Sydney is in the middle of its own Mexican wave. Toward the end of 2022, we saw renowned Chef Manuel Diaz (Ex-Bar Patron) introduce a small venue with big flavour to Pyrmont over at Nativo Mexican, as well as promises from the Maybe Sammy team for an all-new Mexican takeover at El Primo Sanchez. Now it’s Darlinghurst’s turn to get a tequila shot of the action. 

Transforming the space on Victoria Street once known as ‘Victoria’s’, Don Casamigos introduces a sultry new style. Think plush floor-to-ceiling velvet drapes, showstopping chandeliers and intimate low-lit booths to backdrop an all-new style of Modern Mexican Dining.

As well as Oscietra or Beluga caviar bumps, the decadent menu heroes refined fresh flavours inspired by Mexican and Latin American cuisine. Build your own ceviché with your choice of kingfish, Australian king prawns or scallops from the raw bar before moving on to more satiating snacks designed to share. 

Small bites include moreish Flautas – a crispy taco popular in Mexico City, filled with chicken and avocado cream; and pork neck tacos. While heftier share plates include rich and indulgent ingredients like; a 300g MB5+ Black Onyx sliced wagyu with salsa; or the chicken chilindron – a tomato-based stew heralding from North-Eastern Spain; and a Catalonian dish of Spanish mackerel with escalivada. 

Borrowing it’s namesake from two global tequila brands (a union of Don Julio and Casamigos tequila), naturally, there’s a solid tequila-infused cocktail offering. Tipples like the La Rosita feature a heady mix of vanilla-infused house tequila, dry vermouth, rosso vermouth and Campari, also available, a highly quaffable, seasonally rotating Don Casamigos’ signature margarita.
