Things are getting sweeter at Bar Tilda this summer with a fresh lineup of clarified dessert cocktails.

Created in collaboration with Darren Leaney, the acclaimed Melbourne bartender behind Caretaker’s Cottage and the cult clarified tiramisu milk punch, this trio of clarified sips reimagines classic Aussie sweets with serious finesse. The lineup includes a Lamington with vodka, chocolate ganache, rye and coconut, a Pavlova with yuzu gin, passionfruit and mango, and a Peach Melba featuring gin, peach liqueur, raspberry and vanilla, each served crystal clear, chilled and finished with a nostalgic bite.

These specials sit alongside Bar Tilda’s martini-focused menu, but the best time to visit is during Nightcap Club, where guests receive a FREE mini dessert cocktail at 9.30pm, Monday to Friday. Head in on a Thursday or Friday from 4pm for a live DJ, grab a clarified dessert cocktail and ease into a night that feels both playful and refined.
