Cibaria Opens in Manly with Italian Dining and Beachfront Views

Sydney restaurateurs Alessandro and Anna Pavoni (a’Mare, Ormeggio at The Spit, Chiosco, Postino Osteria) have officially opened Cibaria Manly at the Manly Pacific Hotel.

The new venue brings a variety of Italian dishes inspired by the vibrant energy of an Italian piazza, featuring multiple open kitchens throughout the beachfront location, along with a rooftop events space, Cibaria Terrazza.

“We’re excited to have finally opened Cibaria in Manly,” said Pavoni. “The space is beautiful, and we’ve loved creating the menu and designing this incredible venue. When people think of Cibaria, I want them to think of the Italian way of eating and socialising, from morning espresso at the caffetteria, to an afternoon gelato, aperitivo at the champagneria, to dinner at the spaghetteria or bisteccheria. Cibaria offers an all-day Italian experience, and being right on the beach, the view is one of the best in Australia.”

Dylan Cole, General Manager at Manly Pacific, shared, “Following our renovation of the hotel, we are thrilled to have the Pavonis take over 55 North and bring Cibaria to life. Alessandro’s deep knowledge of Italian cuisine and his ties to the Northern Beaches will offer locals and tourists alike a special destination for drinks, snacks, long lunches, or intimate dinners.”

Cibaria’s sharing-style menu includes a Forneria featuring wood-oven classics like slow-proved pizzetta bianca and pizzetta rossa with San Marzano tomatoes, an Antipasteria with starters like Moreton Bay bug Catalana salad, vitello tonnato, and raw dishes like scallops with lemon oil and finger lime, a Friggitoria offering fried favourites like fritto misto and lasagne fritta, a Spaghetteria with dishes such as squid ink spaghetti aglio e olio with crab and malfada aragosta with rock lobster ragu, a Bisteccheria featuring flame-grilled specials like bistecca alla Fiorentina, whole fish, and chicken alla diavola, and a Pasticceria offering Italian desserts like tiramisu, straccetti sweet pizza dough, and Victor’s cheesecake.

In addition, Cibaria’s Gelateria and Caffetteria are open daily from 8am, serving gelato by Ormeggio chef Victor Moya, including classics like Piedmont hazelnut and burnt butter gelato, along with signature gelato coppa such as the Piña Colada. The caffetteria menu offers breakfast favourites, salads, pizzettas, and paninis, along with thickshakes made from gelato.

55 North by Cibaria brings a beachfront cocktail bar with Italian hospitality. In addition to classic cocktails like spritzes and negronis, the bar features Italian-inspired cocktails such as the Paloma Italiano and the Ligure. The venue also serves snacks like cacio e pepe fritters, lobster rolls, and a Cibaria Club sandwich, along with sweets like Nutella bombolone. Regular DJ sets, Aperitivo Hour, and Hospitality Sunday Nights add to the vibrant atmosphere.

Cibaria Terrazza, located on the second level, offers an elevated events space with ocean views, a private bar, and lounge seating. Available for private hire, this space will also host Cibaria events throughout the year.

Cibaria offers 130 indoor seats and additional outdoor seating, while 55 North can accommodate 100 guests. The Cibaria Terrazza has a capacity of 120 for events. The venue, designed by award-winning Luchetti Krelle, caters to all types of diners with counter dining, communal tables, family-style seating, lounges, and classic dining options.
