Cibaria is opening in Manly, bringing Italian dining inspired by a bustling piazza.
Opening later this month, Alessandro and Anna Pavoni, the culinary minds behind a’Mare and Ormeggio at The Spit, are unveiling Cibaria at Manly Pacific Hotel—a fresh take on Italian dining that captures the energy of a bustling piazza. Translating to “food” in Italian, Cibaria invites diners to explore a vibrant all-day experience with dishes crafted from the heart of Italy and served by the sea.
Featuring a wood-fired pizza oven, expect slow proved pizzettas, including the classic Pizzetta Rossa with San Marzano tomatoes and oregano. The Antipasteria offers Italian starters like vitello tonnato and a gorgonzola trolley, served with local honey. The Friggitoria specializes in fried dishes such as Cacio e Pepe Suppli and Fritto Misto.
Pasta takes centre stage on the menu, with dishes like squid ink tagliolini and crab and a slow-cooked tagliatelle ragù alla bolognese. For heartier cravings, the bisteccheria serves flame-grilled specialties, including bistecca alla fiorentina and market-fresh crustaceans. No Italian feast is complete without dessert, and the pasticceria offers crowd-pleasers like tiramisu and Victor’s cheesecake, alongside an authentic sweet pizza dough called straccetti.
Cibaria will also house a cafeteria and gelateria, opening from 9am daily. Indulge in premium gelatos with rotating flavours like burnt butter and piedmont hazelnut, or start your day with expertly brewed espresso paired with Italian pastries.
For something stronger, 55 North Bar delivers Italian-inspired cocktails, from negroni’s to paloma’s, alongside light bites like lobster rolls and cacio e pepe fritters. Meanwhile, the Cibaria Terrazza offers a rooftop escape with ocean views, perfect for private events or lounging with a drink in hand. I think this might just be our new weekend haunt.
Designed by Luchetti Krelle, Cibaria brings an immersive Italian dining experience to Manly, offering 130 indoor seats and alfresco options and is set to open later this month —just in time to spritz up your summer dining plans.
