This Darlinghurst favourite isn’t just launching a new cocktail menu, it’s launching a whole new way to drink globally. Introducing Viendo Doble: three reimagined classic cocktails that explore how flavour connects us across continents. From an amaretto sour with a Japanese twist to a mango fizz inspired by how it is eaten around the world, this menu is all about unexpected harmony in the glass. 

If that wasn’t enough, Wednesday nights are now your chance to taste extra-rare tequila for a fraction of the usual price. Tequila de Primera sees Centro 86 cracking open more than 100 bottles of their backbar selection. A living archive of agave craftsmanship, and the product of years spent in Mexico. That means you can sip tequilas made with 75-year-old wild yeasts or Frankenstein-built thomas for as little as $13 a glass. 

What to Drink: Start with the silky Amaretto Sour– made with Italian amaretto, Japanese umeshu and finished with a dusting of shiso. Or dive into the smoky Old Fashioned, built on mezcal, Islay whisky, and house-smoked chocolate bitter. Don’t skip the Fizz if mango is your thing. 

When to Go: Wednesday is your golden hour for rare tequila, but the full menu pours nightly. Perfect for pre-dinner drinks or late-night catch-ups.
