Three hospitality icons are teaming up for an exclusive wine-paired dinner this October at Barangaroo’s trendy new Nikkei restaurant.
If you haven’t heard, Callao is Sydney’s hottest new destination for Nikkei cuisine. Opening earlier this year, it is now known for its seamless fusion of Japanese precision with the vibrant playfulness of Peruvian flavours. This month, they’re joining forces with none other than Cho Cho San, one of Sydney’s best Japanese restaurants, for a special collaboration dinner.
For one night only, guests will enjoy a bespoke four-course menu featuring nine dishes that blend bold Japanese flavours with a distinctive Peruvian twist. To complete the experience, Nama will curate the wine pairings. Founded in 2021, Nama is a remarkable wine brand that highlights the best of New South Wales’ cool-climate varietals.
The evening will spotlight the culinary talents of Cho Cho San’s Head Chef, Kim (formerly of Saké), famous for his inventive Izakaya-inspired plates, alongside the expertise of Jihwan Choi (formerly of Bar H & Banksii), Callao’s Head Chef. Together, they’ll bring the best of Nikkei flavours to your plate.
Standout dishes on the menu include crispy fish bao with Japanese tartare, aji amarillo, lettuce, and swordfish, fresh sashimi with scallop, prawn, asparagus, avocado, tosazu, caviar, and aji amarillo leche de tigre, and melt-in-your-mouth short rib with confit garlic, aji panca miso sauce, nashi pear, wasabi leaves, prickly ash oil, and Jerusalem artichoke purée. Should you choose to elevate your meal with the wine pairing option, you may try Nama creations such as the 2021 Rosé and the 2021 Tumbarumba Chardonnay.
