Maurice Terzini has officially launched Billy the Pig, a residency in the public bar of Bondi Junction’s Eastern Hotel, now open in the bustling Westfield Bondi precinct.

The venue offers an all-day and late-night bar with live music, counter meals, and pub staples. Billy the Pig revives the venue’s past, taking its name from a 1990s iteration. The venue has long been a fixture in the area, and Terzini’s approach pays tribute to its history while delivering a straightforward pub experience.

The menu features classic pub fare with an Italian influence. The menu nacks hark back to the venue’s history mixed with Italian street foods, including Party Pies, Jatz with cheddar, cabanossi, pickled onion, and calamari with balsamic and aioli. Counter meals range from Chicken Schnitzel and Minute Steak to Beef Ragù Lasagne, Hot Dogs with The Whole Beast Sausage, and Fish & Chips with beer-battered Dory. Late-night pizzas and nostalgic desserts such as Pavlova with banana cream and Golden Syrup Pudding round out the offering.

Drinks include Australian craft beers, minimal intervention wines, and a cocktail list divided into Classics, Modern, and Late Night. The cocktail list features Billy’s Classics like the three-rum Colada and Lychee Martini. Billy’s Modern includes No 8 with Ketel One, Campari, Ruby Grapefruit, and Yuzu Spritz. Billy’s Late Night selection features the Fruit Tingle, Espresso with espresso vodka, and the Jap Slipper with Tanqueray Gin, Midori, and Cointreau.

Billy the Pig hosts live music five nights a week, featuring DJs, producers, and bands from 9pm. With a 3am licence, it serves as a late-night destination in Bondi Junction. Monday and Tuesday evenings feature a late-night jukebox, while mid-week exhibitions and music events add to the vibrant atmosphere. The venue is also home to art installations by leading contemporary abstract artist Elliott Routledge (Funskull), and showcases rare music photography in collaboration with Redfern’s Blender Gallery.

Maurice Terzini has partnered with publican Michael Broome (Jacksons on George) and designer Thomas Jacobsen (North Bondi Italian Food) to maintain the feel of a classic pub while ensuring high-quality food, drink, and entertainment. The venue will also feature initiatives such as a Snack Kitchen pop-up, Wine Safari, and pub takeovers, celebrating the best of Eastern Suburbs and Sydney hospitality.
