Opening this October on Pitt Street, Bistro Ebony is the first solo venture from owner Joey Commerford, whose résumé spans some of the country’s most celebrated restaurants, including Melbourne’s The Press Club and Vue de Monde.

Bistro Ebony distills that pedigree into something more casual, creating a space designed for repeat visits: classic European flavours with a modern edge, an extensive wine list, and cocktails crafted by some of Sydney’s best.

Executive Chef Alessandro Mandelli (Alpha, Grana) leads the kitchen, plating French and Italian-leaning dishes grounded in simplicity, flavour, and flair. Think WA marron wrapped in crispy kataifi pastry with chilli mayo, wagyu short rib agnolotti slicked with saffron butter, and a golden veal Milanese served the traditional way. Desserts bring a little drama: crêpes suzette flambéed tableside, or an apple tart tatin flipped and caramelised in front of guests.
