Tucked beneath Circular Quay, Bar Besuto is one of Sydney’s most intimate drinking spots,
drawing inspiration from Tokyo’s standing bars—only here, you get a seat.
Now, the underground whisky den has launched a new cocktail list, blending Japanese ingredients with inventive techniques.
Highlights include the Amongst the Evergreen, a matcha-infused take on a gin sour with black sesame-infused Roku Gin, Yuzushu, and matcha foam; and the Senbonzakura, a delicate mix of Toki whisky, strawberry, sakura, vermouth, and aloe vera. The Dorayaki Manhattan pays homage to Japan’s beloved red bean pancakes, while a Ramune Fizz combines Roku Gin with honeydew melon for a nostalgic twist.
Drinks are paired with a refined selection of one-bite snacks, from a prawn katsu sandwich to wagyu tartare with caviar and a rotating Mystery Bento Box.
Bar Besuto is open Tuesday to Saturday from 5pm until late, with walk-ins only at 3 Underwood Street, Circular Quay.
