Taste the best of the Northern Rivers without leaving the city at this one-off collaboration between The Dolphin Hotel and Byron Bay Brewery.

Dreaming of escaping the city this weekend? With the festive season fast approaching, most of our weekends are spent racing between BBQs and catch-ups with our mates, leaving little time to arrange a trip out of town. This week, the best of Byron Bay is coming to the heart of Surry Hills for a week of limited edition eats and bespoke brews.

From November 25th to December 1st, Byron Bay Brewing is teaming up The Dolphin Hotel for A Week In Byron. This week-long festival is set to celebrate the food, drinks and people that make Byron Bay one-of-a-kind. Descending on The Dolphin’s Public Bar, the event will deliver a Byron-inspired menu curated by local chef Monty Koludrovic to celebrate the second collab beer, Easterly Lager #2, between The Dolphin’s beverage team and the crew at Byron Bay Brewing.

Sydney diners will be treated to the flavours of this iconic region with a menu inspired by Koludrovic’s hometown of Byron Bay. This curated offering will feature everything from a Freckles’ Burger (loaded with Crumbed Ballina King Prawn, Boon Luck Herbs, Seafood Sauce and served with fries and lemon) to an oh-so-healthy Belongil Bowl (packed with Steamed Rice, Roasted Pumpkin, Cucumber, Mushroom, Egg, Chilli and Sprouts). “The Byron Shire and The Northern Rivers will always be home for me and hold a special place in my world. It makes it all the sweeter to have collaborated on my first beer with the legends at Byron Bay Brewery,” tells Koludrovic.

To accompany this limited-edition menu, The Dolphin will also be pouring Byron Bay Brewing’s newly launched Easterly Lager #2. This easy-drinking session lager takes inspired from the Munich Helles German beer style, showcasing German Pilsner and Munich malt to give this brew a bready, savoury biscuit-type flavour. The brew follows the strict German brewing standards, fermented colder and left to lager for twice as long as the brewery’s regular lagers to deliver a refined and matured bespoke brew.
