A Taste of Talisker With Josh Niland

Do whiskey and seafood have anything in common? Let us tell you, they most certainly do! Talisker Whiskey and Josh Niland have just become THE collab you need to know about. What would be impossible to some has become the challenge that Josh and his team from Saint Peter will be showcasing at their pop-up, Taste of Talisker, held above the rugged shores of North Head in Manly.

For the two-night pop-up, the seaside location will evoke the feeling that you’re along the shores of Scotland, tasting Talisker’s range, paired with a three-course menu with the flavours of Talisker throughout: smokey, salty and spicy. There’s also a two-hour guided tasting whilst enjoying bar snacks from Saint Peter too.

The menu will feature Niland’s signature no-waste sustainable approach to seafood, alongside the unique and distinct flavours of Talisker. The three-course menu begins by accenting Talisker 10-yr-old’s salty and smoky essence, paired perfectly with Niland’s salt and vinegar line caught Blue Mackerel. This is served with Kamut sourdough to mop up the delicious Gordal olive brine that is poured over the top. A sip of Talisker rounds out this wonderful starter to pre-empt what’s to come.

The second course features outstandingly cooked calamari over coals to permeate smoke, which is then thinly sliced to be noodle-like. It is paired with the tastiest Nduja, made from Calabrian Yellowfin tuna. Served alongside Talisker Storm, the smokiness from the coals and the Nduja sing through brilliantly.

The final course is yet another showstopper. Butterflied King George whiting cooked over coals, matched with the most interesting sauce – finger lime, tapioca and chives – a beurre blanc with a twist. Paired with a tipple of Talisker Sky, there is everything to love about this course and the freshness of this well-rounded and sweet flavoured whiskey.
