Bondi is leaning hard into its endless-summer era with the launch of Rosé by the Waves, a limited-run pop-up transforming the southern end of Promenade Beach Bar into a pastel-pink slice of the French Riviera. Running daily through to 30th April, the space pairs Bondi’s famously laid-back charm with the effortless elegance of Rameau d’Or Rosé, think deck chairs, umbrellas, a floral-decked bar cart and a picture-perfect arch framing those iconic sweeping ocean views.
With DJs spinning from Friday through Sunday and magnums of Rameau d’Or Rosé chilling on ice, it’s the kind of spot you wander into for a quick glass and end up parking yourself all afternoon. The drinks list centres on the 2024 vintage from Côtes de Provence, crisp, dry and built for sunshine, alongside three summery cocktails showcasing rosé in inventive, refreshing ways.
