Quay to Close in February 2026 After 25 Years on Sydney Harbour

Quay, one of Australia’s most celebrated restaurants, will close in the new year, with its final service on 14th February 2026.

Fink, the hospitality group behind Quay, has confirmed the closure of the harbour side restaurant at the Overseas Passenger Terminal. Until then, Quay will continue trading Tuesday to Sunday from 5.30pm. From 1st January to 14th February 2026, the restaurant will serve its signature Quay Experience menu.

The restaurant first opened in 1988 as Bilson’s. In 1999, it became Quay and quickly built a reputation for refined dining with sweeping harbour views. When Executive Chef Peter Gilmore joined in 2001, the restaurant embraced a nature inspired approach. As a result, Quay earned Three Hats for 23 consecutive years and appeared on The World’s 50 Best Restaurants list. Iconic dishes like the Snow Egg also entered Australia’s culinary vocabulary.

Reflecting on the closure, Leon Fink described Quay as a central part of his life’s work. Meanwhile, Gilmore called leading the kitchen the honour of his career. Beyond its awards, Quay shaped generations of chefs and sommeliers. As the restaurant enters its final season, the focus turns to celebrating its people, creativity and lasting influence.
