Introducing INCA, Melbourne’s first Nikkei restaurant at Morris Jones this new venture melds the precision of Japanese culinary techniques with the vibrant flavours of Peruvian cuisine. Michelin-trained chef Carlos Moreira leads this culinary innovation.

INCA’s menu celebrates Nikkei cuisine. Chef Moreira crafts unique dishes such as ceviche and tiradito. Sydney rock oysters with pisco sour granita, tostada de camarones with aji verde, and spanner crab taquitos stand out. Meat lovers will relish wagyu with crispy capers and the 300g black Angus picanha with sweet potato and anticuchera sauce.
