Zephyr Rooftop Bar has opened its doors to stunning panoramic views of Barangaroo and Darling Harbour.
Located on the 12th floor of the Hyatt Regency, is where you’ll find Zephyr Rooftop Bar, the new luxury sky bar that’s risen above the rest. Think sexy, sleek and exclusive with a slight nautical theme – super yacht not tug boat style. The drinks have been curated by International Mixologist Grant Collins, focusing on vermouth inspired cocktails and vintage rums sourced from around the world, dating back to the 1950s and 60s.
Bar Manager Mirko Simonazzi is excited for the new venture. “We’ve been able to create a variety of cocktails using unique barrel aged vermouths served on tap and rums using hypersonic and sous vide infusions. The hypersonic infuser is able to ‘barrel age’ cocktails in seconds and infuse spirits in minutes to create unique and innovative drinks” he said. Along with vermouth, you’ll find Mai Tai’s on tap at Zephyr Rooftop Bar but oddly no beer. It’s cocktails all the way at this establishment.
Zephyr will be home to Sydney’s largest range of digestives and aperitifs. They are also creating luxury frozen cocktails, fresh hand squeezed juices and a contemporary food menu to match. You can already find small plates such as pork and herb meatballs filled with buffalo mozzarella served with tomato garlic sauce ($14), crab cakes wrapped in kataifi pastry with chives, paprika, lemon and rum-chipolata sauce ($18), truffle, mushroom and parmesan arancini Balls ($18) and kobe beef or corn-fed chicken lettuce cups with mint, coriander and shallots ($24). If you’re looking for something a little more substantial, try the charcuterie board with lonza, coppicola and wagyu bresaola ($26).
Zephyr Rooftop Bar is set to bring sophistication to hotel guests and Sydney siders. It’s a perfect spot to unwind in the last weeks of summer and relax with the best views of Sydney.
