Solera, A New Champagne and Cocktail Bar Lands in Sydney

The doors are officially open at Solera. Have you checked it out?

Good things come to those that wait, and our patience has at last paid off with the opening of a brand new small bar. It’s taken longer than anticipated open Solera Bar, but Millers Point is now playing host to a new luxurious Champagne and cocktail bar.

Situated on the street level of a historical heritage building on Hickson road, Solera is the product of both old and new. The bar occupies a sandstone building originally constructed back in 1845, with many of the original features still in tact today. New comes from the modern interior, complete with green velvet couches, a luxe marble bar top and sleek wooden furnishings. That same modern flare reveals itself in the food and drinks menu.

Owners Scott Bayly, Ty Van Emden and Roman Kristek have pulled together a highly talented team in the creation of the space. Shaking and stirring cocktails is internationally renowned bartender Marian Beke (The Gibson, London), who consulted on the cocktail menu and helped create a cocktail list that pushes the boundaries. There’s an Apple of Louisiana cocktail, plus Solera’s take on the Sazerac. This one uses apple brandy and absinthe jelly to keep the cocktail cool, teamed with drops of rock sugar for a sweet caramel flavour.
Solera Bar also happens to be a Champagne lover’s dream, boasting a range of hard-to-find drops from houses including Leclerc Briant, Jerome Dehours, Benoit Dehu, Nicolas Maillart  and Uylsse Collin.
When it comes to the food offering, Chef Tony Gibson (Ruby and Rach, Astral) has created a menu which tips its hat to his famous Rueben sandwiches. They come filled with decadent Wagyu corned beef, swiss cheese, sauerkraut pickles and Russian dressing. Also available are lobster rolls, boasting a half lobster, citrus mayo, celery and chives ($18). If sharing is more your style there is always the mixed cheese and cold cut board ($26).

With plenty of warm weather still ahead of us, we recommend taking advantage of Solera’s sun-drenched front terrace. It features beautiful green marbled tables, perfect for a post work wind down.

Solera is now open 4pm from Monday to Saturday.
