Oxford Street night life is getting a much needed boost from Applejack Hospitality (Bondi HardwareThe Butler, SoCal, The Botanist) when owners Hamish Watts and Ben Carroll open their new bar Della Hyde in Darlinghurst at the end of the month. This will be the hospitality group’s fifth venue to open in four years.
With an acute focus on atmosphere, ambience and old world glamour, a visit to Della Hyde will not be your average outing. The bar will reflect a flirtatious interpretation of the luxe lobby bars of the grand hotels of the 1920s and 30s. Patrons will enjoy the brick columns, ornate arched beams, leather Chesterfield banquettes, period feature lighting and mirrors, and timber and tile floors, that are all in tones of pink and grey with brass finishes. There will also be a strong DJ focus with music from a line up of local favourites.

Mixmasters Joe Worthington, Della Hyde’s General Manager, and Applejack Group Bars Manager Lachy Sturrock have created a sophisticated cocktail list. They’ll be serving classic drinks with a twist, including the cold-drip espresso aperitif-styled cocktails served over ice.
Marrying flavours of Europe and North African, Group Executive Chef James Privett has crafted a menu of bar snacks and share plates. Look out for the pea and pancetta croquettes with harissa mayonnaise. The spiced lamb, olive, onion, spinach and labna pizza, and paprika chicken skewers with parsley and barley salad are also set to go down a treat.
Della Hyde is located at 34 Oxford Street Darlinghurst, Sydney. When it officially opens on 25th November, it will conclude the month-long festivities of ‘Applejack Celebrates’ held across Applejack Hospitality venues.
