From Cuba to Sydney, Hacienda
The highly anticipated Hacienda Bar has opened its doors within the Pullman Quay Grand on Sydney Harbour. Boasting phenomenal views, this Cuban oasis is a mix of pastel coloured vintage furniture and lush green plants surrounding the room. It’s inspired by the grand plantation architecture of Cuba, mixed with the lux and playful vintage hotels of 1950’s Miami. Hospitality heavyweights Applejack Hospitality group, the guys behind Della Hyde, Bondi Hardware, The Butler and The Botanist, are responsible for the new bar which is set to be one of Sydney’s hottest new bars. Come summer especially we’re sure this bar will be the perfect place for sunset cocktail by the water.
Hacienda has a long, sleek and wooden bar decked-out with lots of rum and an extensive cocktail list. Try the Old Presidente ($20), a cocktail inspired by the classic Old Fashioned served with aged rum, orange curacao, house spiced raspberry syrup and Angostura bitters. They also have pre-bottled mojitos made with blanco rum, crème de menthe, mint, falernum, orange bitters and lots of lime.
The food menu at Hacienda is designed to match the drinks and has been put together by Executive chef Stefan Brademann. He’s created a Cuban and Latin American inspired menu with favourites such as empanadas and tortillas. There are smaller, lighter dishes perfect for a nibble with drinks or more substantial dishes for a full meal. One menu favourite is the Cuban Reuben. This is a take on the classic Reuben sandwich with Cuban spiced homemade pastrami, smokey cheese and Marrickville pickles served fittingly in a Cigar box.
50s furniture, pastels, rum, cigars and the botanical plantation vibes makes this bar such a treat on the eyes. With floor to ceiling windows overlooking Sydney Harbour, this place is far from your usual hotel bar. Good drinks, good food and stylish décor, this is definitely a place to visit this coming summer.
