Most classic winos understand that regardless of whether your glass is half empty or half full, there is always room for more wine. It is for these individuals, seeking more, that Cake Wines have re-opened their School of Wine. These informal educational classes will be run by Nomad Sommelier and rising star of the wine world, Samantha Payne. She’ll take you through the world of wine as you taste, match food and join in a general air of slight rebellion.

Across four modules, Payne will discuss and debate with you the how’s, why’s, what’s and whom’s of wine. If any secret sommelier’s sneak their way in, Payne will know. She’s here to impart her extensive wine knowledge to lovers of nice wine, not to compare notes. So, if you simply just enjoy a nice class of wine, begin your journey! Sessions may be purchased individually or as a whole course ($63.69 – $200).

Weekly Modules:

Module 1: Vines, Vineyards, On the Land
Saturday 25th March 2017, 12pm-2pm

This module answers numerous questions a wino laymen would query:

  • Why site matters
  • Process of fermentation
  • How do wine makers turn teeny tiny grapes into a bottle of wine and why?
  • Where grapes come from and how viticulturists and winemakers decide when and what grapes to pick?

Module 2: Sip, Swirl, Savour, Sensory Evaluation
Saturday 1st April 2017, 12pm till 2pm

There’s always that one dinner party guest who has an opinion about the undertones of the wine and its level of body. Well, this module will provide you with the knowledge to be that other guy. The one counterfeiting the first guy’s opinion. “It’s more a hint of blackberry than raspberry, Bob.” Payne will have you delve into the basics of sensory evaluation and how to ascertain the flavours within wine, revealing the mystery of the scents presence.

Module 3: Food and Wine Pairing 101
Wednesday 5th April 2017, 6.30pm till 8.30pm

You will now take a step into the life of a novice Sommelier. Listen up and be ready to strut your knowledge at your next dinner party. Yes, you’ll be that person, while your friends sit as the one you used to be. The individual secretly, madly jealous of the depth of your wino knowledge in its full bodied entirety.

Module 4: Weird and Wonderful – natural, skin contact, organic and biodynamic wines
Saturday 15th April 2017 12pm till 2pm

With the increasing awareness and preference for all things ‘natural’, ‘natural wines’ have emerged more prominent than ever before. This last module will equip you with knowledge on the ins and out of all wines ‘natural’, ‘skin contact’, ‘organic’ or ‘biodynamic’. You will step through each stage of production and their widely differing practices. You will finally understand what you’re asking for when you query ‘what biodynamic wines do you stock?’, beyond the preservative hangover-free nature of this wine category.
