Merivale Gets Set to Open Bert’s Brasserie & Bar

Merivale’s Hemmes reveals details on Bert’s at The Newport.

It would seem that not a week go by when Justin Hemmes’ name isn’t front and centre. Sure enough he’s done it again, announcing that Bert’s will be opening in January 2018, an elegant yet relaxed brasserie and bar overlooking the expansive grounds at The Newport.

Inspired by the grand hotel dining rooms of the 1930s and 40s, Bert’s sits in contrast to the family friendly aura exuded at The Newport. Here, it’s about showcasing the finer things in life. Think fresh oysters, dressed crab and live lobster from the tank, teamed with a selection of beef and whole fish roasted in a charcoal oven. An impressive kitchen will take centre stage, accented by charcoal ovens and basque grills, opening up to an elegant brasserie and cocktail lounge.

In keeping with the relaxed seaside aura embodying the Northern Beaches, Bert’s will sing lively hues of jade greens and coral pinks.

As you would expect from the Merivale group, Bert’s will front a strong hospitality team. Executive Chef Jordan Toft will run at the helm of the kitchen, with Group Sommelier MS Franck Moreau and Group Bars Manager Sam Egerton also controlling operations.

Wines will be displayed in a stunning cellar at the entrance, curated with Master Sommelier Franck Moreau’s unrivalled expertise. Here, you’ll find a concentration of classic Australian vinos, including riesling, semillon, shiraz and cabernet vintages. To accompany this will be a range of European drops plus emerging and quirky labels.

Cocktails, as developed by Egerton, will take cues from grand European hotels and American country clubs with each drink representing one of the classic styles. Egerton’s pick of the list is inspired by the classic Royale, with Absolut Elyx vodka, ginger cordial and champagne, finished with finger lime caviar.

“The Newport has always held a very special place in the hearts of the Northern Beaches community; it is a truly magnificent site, in an incredible location. Our long-term vision for the venue is to create a destination that genuinely has something for everyone – all occasions, ages, budgets and tastes” said Justin Hemmes.

“We opened the outdoor area first to provide a vibrant gathering place where friends and families can get together over a beer and a casual bite to eat. Now with the launch of Bert’s, we can also offer a special experience for those wanting that little something extra. Outstanding food and exceptional service in a beautiful setting – but still very comfortable and relaxed”.

Bert’s is set to open in January, with the precise date yet to be announced.
