Morgan McGlone- Flinders Inn
Most chefs have a few good stories to tell, romantic tales of tavelling the world and surrounding themselves with amazing produce and rich aromas. Morgan McGlone, Head Chef/Owner of Flinders Inn is no different. Morgan has worked at some of Sydney’s best restaurants including Summit, CBD and Salt. He’s worked in New York as a personal chef, been flown to luxurious destination, cooked for some amazing people and even did a stint as a model talent broker. After Secret Foodies #12 I caught up with Morgan for some Q&A time.
So what inspired you to become a chef? Family, my grandfather and my Father were both cooks. Spending vacations in NZ and hunting, fishing and picking fruit was awesome. That played a massive influence on me becoming a cook.
How does the Sydney food scene compare to other cities where you’ve worked? We have the most amazing restaurants but don’t have the population to sustain it. Though we are a million miles away from USA and Europe we can certainly hold our own.
What inspires you in life and in the kitchen? Passion, new ingredients…the beginning of each season…information on new techniques.
Do models really eat? Yes they really do, not as much as me but for sure they all love to eat . Problem is that they have to be careful how much they eat.
What’s the strangest thing you’ve ever eaten? Porcupine, and no it was not nice at all.
How has social media impacted your business? Massively, the ability to access information for me and my team is great. Also we are able to tell people (friends, family and clients) what we are actually up, it’s a way for the public to feel more involved in what we do.
What is TOYS and how are you involved? TOYS is Taste Of Young Sydney (recently renamed TOYS Collective). I started it up with my mate Mel from Fooderati and some local Chefs . It is basically for the general public to get excited about the young talent pool we have in Sydney by showcasing their talent at different events. Due to popular demand we’re now hosting our first event in Melbourne on December 7th at Embrasse Restaurant.
What is your favourite ‘cheap eat’ in Sydney? Chairman Mao in Kingsford, so cheap and so good.
Where is your favourite place to drink? Love Tilly Devine and Eau de Vie for Bar’s.
What do you do for play (when you’re not in the kitchen)? I love catching up with mates after service finishes, have been hitting Duke Bistro lately as it closes at 2am Fridays and Saturdays. I’m also heavily into UFC and Video Games. Oh and following the All Blacks.
If I wasn’t a chef I’d…? I’d love to just get paid to travel and write about it…
